València's Municipal Markets: Between Tradition and Renewal
The markets of València city face the challenge of adapting to new consumer habits without losing their traditional essence.

València's municipal markets, such as the Central Market, are epicenters of social and commercial life, but they face the need to adapt to new times to maintain their relevance.
The 230 stalls of València's Central Market, a modernist-style structure, exemplify the variety of goods and the bustle that turn these venues into epicenters of sales, tourism, and social life. A significant portion of the nearly sixty thousand daily shoppers who frequent València's municipal markets pass through here, along with numerous visitors eager to experience the city's essence.
These spaces are not merely commercial hubs; they also reflect trends and customs, such as the rise of the 'esmorzaret' (mid-morning snack). In Dénia's market, for example, the Magallanes bar stands out for its sandwiches, including its famous figatell, grilled eggplant and onion with mustard sauce, serving around a hundred units on Saturdays, a 40% increase from a decade ago.

The president of the Federation of Neighborhood Associations of València emphasizes that municipal markets are the «beating heart of our neighborhoods», meeting places that foster human relationships. However, she expresses concern about the situation of many of them, which suffer from unequal conditions compared to large supermarkets and a lack of decisive political commitment and real investment beyond the monumental markets.

This concern is shared by the Valencian Association of Consumers and Users (Avacu), which highlights the importance of sustaining the slight increase in consumers in the municipal markets of the Valencian Community. They propose making them more attractive in terms of hours and offerings for younger audiences, without losing the usual older clientele.
Confermercats, which groups markets in Castellón and València, seeks cooperation for promotion and training. They acknowledge that some stalls struggle to be profitable but reject closures and advocate for leveraging local resources. The case of the Mosén Sorell market, repurposed as a leisure space, is a singularity due to its proximity to the Central Market and will not be applied to other venues.
The Colón Market, in the Ensanche neighborhood, is an example of successful transformation, evolving from a fresh produce center to a leisure space with restaurants and select shops. The key has been the shift towards gastronomic spaces that offer more complete experiences, leveraging the synergy between sales stalls and hospitality establishments.

In contrast, markets like Castilla or Jerusalén show the more complicated side. The Castilla market maintains its essence of fresh produce sales, but with half of its stalls empty, creating a sense of abandonment. The Jerusalén market, due to its hidden location, has low public footfall, and vendors lament the lack of signage and competition from supermarkets.
The Central Market, with its offer of up to twenty thousand products and ten thousand non-presential purchases last year, is the clearest example of commercial success in València. 60% of its stalls offer fresh food and adapt to new consumption trends, such as fifth-range products. Its manager highlights constant demand and the upcoming comprehensive renovation of the venue.
