Restaurant chain The Fitzgerald and chef Ricard Camarena have officially launched 'Canallas', a four-hands gastronomic collaboration blending urban cuisine and grilled dishes with the spirit of Canalla Bistro.

The collaboration, named 'Canallas', combines the urban character and grilled cuisine of the Gelabert brothers' brand with the irreverent and eclectic spirit of Canalla Bistro, one of the Michelin-starred chef's recognized establishments.
The launch event took place on Thursday at the Mercado de Colón in Valencia, featuring a tasting of the dishes, a panel discussion moderated by writer Jesús Terrés, and the filming of a documentary vlog for The Fitzgerald's YouTube channel.
The result of this partnership includes three exclusive, limited-time creations: the Artisan Pastrami Burger, the Grilled Ribs with Peking Sauce, and the Smoked Flan, a reinterpretation of Canalla Bistro's traditional egg dessert with Fitz's signature smoked milk.

"Cooking with Ricard stems from a personal and professional relationship built over time. This demonstrates that the best product, from one of the country's most respected chefs, can be accessible to everyone."

Carlos Gelabert · Co-founder of The Fitzgerald

"It's an opportunity to bring Canalla Bistro's cuisine to a much wider audience, maintaining its character, and doing so based on friendship and mutual respect for the craft."

Ricard Camarena · Chef
Carlos Gelabert, co-founder of The Fitzgerald, highlighted that this launch fulfills a long-held desire, rooted in their personal and professional relationship and the goal of making top-quality products accessible. Ricard Camarena views 'Canallas' as an ideal platform to extend the philosophy of his more free-spirited and cosmopolitan restaurant, preserving its essence through friendship and mutual respect.
This alliance signifies a strategic evolution for The Fitzgerald, which, while keeping the hamburger at its core identity, is expanding into new formats and product lines within contemporary dining.
