The gastronomic initiative, which began on May 8th, has offered a wide variety of proposals for the popular lamb sandwich, ranging from traditional recipes to reinterpretations with international touches such as Japanese, Mexican, or Oriental influences.
The Paquito, a reinterpretation of the classic 'pepito' using lamb meat, has gained popularity across Spain thanks to its versatility. It can be found in various types of bread such as mollete, brioche, baguette, focaccia, or even in formats like tacos or baos.
Among the participating establishments in Valencia are well-known names such as Tonyina, Bodega Anyora, Bàhn Mí, Bilibirloque, Portolito Playa, Maestro Bar, Somos Raro, Serralunga, Vaqueta, Vuelve Carolina, Casa Baldo, Alenar, and Trinquet Pelayo, among others.
This year, Maestro Bar won the award for the Best Paquito of Valencia 2026, thanks to its creation featuring breaded lamb escalope, spring onions, and roasted garlic alioli.
The route has not only served to promote the sandwich but also as an excuse to discover new venues and enjoy culinary proposals adapted to each cuisine, from the traditional Valencian breakfast to author cuisine or international flavors.
The Paquito Route 2026 concludes on June 7th, still offering a few last days to taste the different versions of this sandwich that has established itself in Spanish urban gastronomy.
