With the arrival of spring, Castellón's gastronomy is filled with new flavors linked to the territory. Lino Gastronòmic restaurant, situated in the emblematic Casino Antiguo of the city, launches its new seasonal spring-summer tasting menu, a proposal where proximity products and support for local producers once again become the main protagonists.
Through gourmet preparations and contemporary techniques, the restaurant highlights some of the most representative ingredients of the province, from fish from Grao to meats from the interior and citrus fruits from the 'terreta'.
The menu, named 'Sabores de la corona' (Flavors of the Crown) and available from May 8th until October 12th, consists of a total of 15 courses that explore different landscapes and flavors of Castellón.
The experience, conceived by chef Jesús Milián, begins with a selection of snacks including deer jerky, duck ham, duck pâté brioche from Les Useres, Balfegó tuna belly 'ximo', and red prawn from Grao, in addition to charcoal-grilled beans with turbot pil pil.
Main courses include proposals such as white prawn with 'hanging' tomato water, sea bass ceviche with cucumber water, cilantro, and local citrus, charcoal-roasted eggplant with cream and hazelnut vinaigrette from northern Castellón, white asparagus with hollandaise sauce, skate rice, red snapper 'beurre blanc', Mediterranean red tuna tataki, and Morella beef cheek.
A gastronomic journey through different towns in the province concludes with two desserts: local lemon in various textures and chocolates.
The menu is priced at 90 euros and offers the possibility of wine pairing. This proposal aims to provide a culinary experience linked to the territory, allowing diners to taste some of the province's most renowned products through signature cuisine that combines tradition, technique, and creativity.
