A creamy rice dish that fuses the flavors of the sea and mountains of the Marina Baixa

The program La cuina de Morera presented today a dish that stands out for its combination of local products, joining loquats from Callosa d'en Sarrià with mantis shrimp.

The gastronomic proposal uses two different stocks prepared in advance: one made from toasted mantis shrimp and another from rockfish. Mixing these two elements in an iron pot adds great depth to the bomba rice grains.
To complete the dish, oil-confit loquats, a nyora pepper mince, and saffron are added. As explained on the show, this recipe represents the Alicante geography turned into a fine dining dish.
