Chef Andrea Díaz has opened Ukiyō, a restaurant in Alicante that fuses Japanese cuisine with Mediterranean products, offering a unique gastronomic experience.

Chef Andrea Díaz, after seven years of training and working in renowned establishments such as Kabuki and LÚ Cocina y Alma, has settled in Alicante. In 2022, she opened her restaurant Ukiyō, initially in the Central Market, seeking a balance between her professional and personal life. Recently, she moved to a new location at Cienfuegos 7 street, where she has designed a space that invites isolation and immersion in a carefully crafted culinary experience.
At Ukiyō, the emphasis is on raw fish and technique, but Díaz describes her concept as a combination of Japanese experience, live showmanship, and a touch of surprise. The tasting menu, priced at €73, is complemented by daily specials that the chef herself announces. Anais Tomás accompanies Díaz in the services, providing fundamental support to the project.
Among the highlighted dishes is the eel taco, featuring a crispy base, smoked eel from the Ebro Delta, pickled apple, and miso mayonnaise. They also serve sashimi of scallop from Hokkaido, shrimp from Santa Pola, and salmon roe. Díaz fuses Japanese and Mediterranean ingredients, emphasizing the quality of local shrimp and preferring Japanese scallops for their texture.
The experience at Ukiyō requires time and an open mind. The restaurant offers two lunch seatings (1 PM and 3 PM) and two dinner seatings (8 PM and 10 PM). It is recommended to book for the later seating to fully enjoy the experience, including dessert.
